I'm making a list of all quick and easy dishes completely vegan I can think of to make them and post them this month and today I felt like something with nopales.
In Mexico the cactus is one of the most popular foods and a great significance as a symbol of our flag: it appears an eagle on a cactus, devouring a snake.

is also delicious and very inexpensive making it very accessible to everyone. It has lots of properties and it is extremely versatile in soups, stews, salads and even juices. To me, love me do it at version "steak" because it combined with sauteed onions takes a delicious taste and aroma!

Nopales Bicentennial onions
(2 servings)

6 dwarf cactus and tender, boneless and well washed
1 / 2 large onion, sliced \u200b\u200b1 clove
minced garlic 2 tablespoons olive oil 2
sliced \u200b\u200btomatoes Sea salt and pepper to taste
few drops of lemon (optional)
green or red sauce (optional)


In a large skillet put olive oil to heat and add the onion and garlic until translucent and beginning to brown.


I love this step because I love the smell of onions and garlic together when they are in the pan! Put them in a covered container in what you do cactus.

In the same skillet, place the cactus in pairs (or as will fit in your pan), add salt and pepper to taste and cook for 3 to 5 minutes, or until they change color to green more opaque. Turn it and already cooked through, remove them from heat and repeat with the other.
